Coffee Chiroso

Chiroso coffee has a remarkable production and a particular and distinctive cup profile that points towards exotic coffees. In addition, the plant highlights its high nutritional demand, as it requires at least four fertilizations per year, but this demand is compensated by its high productivity. On a sensory level, it is a floral coffee with a sweetness reminiscent of the smell of rue, high complexity, intensity and a lasting residual.

The flowers of the Chiroso are very small and have a distinctive smell, with notes of melon, yellow fruits and peach. When the grain is tasted, it is perceived as sweeter than other varieties, a very important characteristic at the sensory level. However, cultivating this variety presents certain challenges, such as the need to fertilize more often, which increases production costs, and the importance of establishing cultivation at altitudes between 1950 and 2200 masl to avoid diseases such as rust at altitudes lower

Although its documentation is limited, Chiroso coffee has many characteristics that mean it can be considered a coffee within the segment of truly special or even exotic coffees. Its organoleptic qualities represent a good opportunity for small producers in the municipality of Urrao, since they have ideal geographical conditions for their cultivation and already defined protocols for their proper processing.

As with other coffees, despite the genetic particularities that may already give it a special coffee connotation, planting the caturra chiroso in the right conditions and developing the right harvest and post-harvest processes is key to expressing its full potential in the cup.

Peace Project:

The coffee from Proyecto Paz is a bean that comes from "peace building" projects in different areas of Colombia (Antioquia and Tolima). In these areas, we work with victims of the conflict: ex-combatants of armed groups, indigenous communities affected by violence and replacement of illicit crops. Through the project, we work together with the producers to improve the quality of their coffee, in favor of being able to buy their crops at a better price in order to increase their income. It also seeks to make its production more dignified, prosperous and sustainable, thus avoiding a relapse into conflict in these marginal and vulnerable areas. Work is being done in municipalities such as Briceño (Antioquia) for the replacement of crops, in Dabeiba, Peque (Antioquia), Planadas and Alvarado (Tolima) with victims and peace signatories. The Urrao region is known for its violence due to the still active drug trafficking of a group called the "gulf clan".

In addition, the Urrao region itself is part of the Andean bear corridor. The project, together with the producers, reinvests part of the profits from this fair trade in reforestation projects in order to maintain this corridor in a suitable habitat for the Andean bear.
